Linsenmeyer is an assistant professor of nutrition and dietetics at Saint Louis University. Her research and clinical practice centers on gender-affirming nutrition care for the transgender community. Her nutrition courses include advanced nutrition, critical readings of research material, foundations in nutrition and innovation in dietetics practice. Linsenmeyer is a member of the Academy's Research and Nutrition and Dietetic Educators and Preceptors dietetic practice groups. She is a graduate of Saint Louis University where she earned a master's degree in nutrition and culinary entrepreneurship and a doctorate in higher education administration.
