Elizabeth Klingbeil is an Assistant Professor at the University of Texas-Austin, where she educates pre-health professionals in nutritional science and scientific literacy. Her research has examined the use of pre- and probiotics for the prevention of obesity and associated co-morbidities by promoting a healthy gut microbiome. Her work addresses the need to improve satiety signaling to establish healthy eating behaviors. As a clinical dietitian, Klingbeil has experience in weight management, bariatric surgery and critical care nutrition. She earned her bachelor's degree from Concordia College (Moorhead, Minn.) and her doctorate in Nutritional Sciences from the University of Georgia (Athens, Ga.).
