As telehealth nutrition services continue to expand, registered dietitians need to understand the professional, legal, ethical and business considerations that come with working in this rapidly evolving practice environment. This session will provide practical guidance for RDs who are considering, entering or currently working with telehealth nutrition companies to provide nutrition services.

This lunch-and-learn will touch on conducting due diligence before contracting with a telehealth company, evaluating key contract terms, understanding state licensure and telehealth law requirements, and navigating credentialing, coding, billing, and documentation expectations.

The session will also address how to determine whether telehealth is an appropriate modality for a client or patient and how to apply the Code of Ethics for Nutrition and Dietetics Professionals in telehealth-based care.

Speaker Bios

Stephen Fatum advises physicians, physician organizations, medical groups, health systems, hospitals, associations, and nonprofit entities on a wide range of healthcare industry matters. Drawing on decades of legal experience, including more than ten years in-house with large healthcare organizations, Stephen provides practical, business-minded counsel on governance, bylaws, operating agreements, mergers and acquisitions, reimbursement, compensation plans, joint ventures, regulatory compliance, employment, professional services, shareholder, affiliation, separation, and management services agreements.

Stephen is the former general counsel of Advocate Medical Group, S.C., a multispecialty medical group now consisting of over 1,500 physicians in suburban Chicago, and previously served as general counsel of Lutheran General Medical Group, S.C. and assistant general counsel of Lutheran General HealthSystem. He has worked closely with boards, CEOs, COOs, CFOs, CMOs and other senior leaders, giving him a deep understanding of the operational, financial, legal, and interpersonal challenges facing healthcare organizations.

Known for his thoughtful listening, professionalism, and practical problem-solving, Stephen helps clients identify root causes, evaluate options, manage expectations, and reach fair, sustainable resolutions. He also defends physicians in disciplinary proceedings and serves as a Certified and Experienced Mediator.

Kim Iles is the Senior Manager of Nutrition Services Coverage at the Academy of Nutrition and Dietetics, where she leads state-level strategic initiatives to advance access, coverage, and payment for nutrition services across public and private payer systems.

A registered dietitian and former private practice owner of more than a decade, Kim brings deep expertise in healthcare payment models and payment advocacy. She has successfully driven efforts to expand patient access to RDNs and MNT across both Medicaid and commercial payer landscapes, collaborating with payers, policymakers and providers.

Beth Mordarski is the Manager of the Nutrition Focused Physical Exam Program for the Academy of Nutrition and Dietetics, where she developed the Academy's NFPE Hands-on Training Workshop and Recorded Modules, along with the newly developed NFPE 2.0 Workshop. Beth began her career in community hospitals and continued to a large academic medical center and a long-term acute care center.

She has over 20 years of clinical experience in a variety of patient populations (e.g. critical care, GI, oncology, transplant, cardiac, neurology, medical/surgical), which assisted Beth in the development of the Academy's NFPE Workshops and ongoing malnutrition education. She finds it rewarding to be able to pass on the NFPE skills to fellow dietitians and interns across the United States and Globally.

In addition, Beth is the author of the Academy’s NFPE Pocket Guides, along with journal articles, and is a frequent presenter and reviewer on the topics of malnutrition and NFPE.

Charla Burill is a licensed attorney (Michigan and North Carolina) and an RD. She serves as Senior Director of State Legislative & Government Affairs for the Academy of Nutrition and Dietetics, leading state-level advocacy strategies, including licensure modernization and the Dietitian Licensure Compact.

Previously, Charla was the Executive Director and registered state lobbyist for the North Carolina Board of Dietetics/Nutrition, where she led the successful 2018 modernization of the state's Dietetics/Nutrition Practice Act and supported similar reforms in other states. For her leadership advancing licensure and consumer protection, she received the Council on Licensure, Enforcement, and Regulation (CLEAR) Consumer Protection Award in 2022. Earlier in her career, she practiced law at an international firm in Detroit.

Charla is Chair of the North Carolina Bar Association's Administrative Law Council and has served as a Legal Aid of North Carolina volunteer attorney. She also served on the board of Farmer Foodshare from 2015 to 2022, including two years as Chair.

With a dual background in law and dietetics, Charla is dedicated to policies that strengthen the profession and protect public health.
