Description

Hospital malnutrition is common yet underdiagnosed, contributing to higher morbidity, mortality, longer length of stay, and increased costs. This session will review commonly used malnutrition screening tools, explore applications of artificial intelligence (AI) in clinical nutrition, and explain how AI technology using electronic health record (EHR) data can support continuous malnutrition risk screening in hospitals. Speakers will present a retrospective validation study of a novel AI screening system spanning 3.75 years and over 100,000 adult inpatient admissions at a large academic medical center, comparing the AI model with a version of the nurse-administered Malnutrition Screening Tool that was used in practice. This demonstrated strong criterion and predictive validity when indexed against dietitian-recorded and discharge-coded malnutrition. These findings highlight the potential to enable earlier, more accurate detection of malnutrition risk and timelier interventions. The session will close with a real-world case study from a well-respected health system, which will include a deep dive into RD workflow, adoption challenges and strategies, and measurable clinical outcomes.

    Stacy Pelekhaty is the Senior Clinical Nutrition Specialist at the R Adams Cowley Shock Trauma Center, within the University of Maryland Medical Center in Baltimore, Maryland with over 15 years of experience in high acuity care, Stacy specializes in integrating complex nutrition research into bedside clinical workflows. As a fellow of both the Academy and ASPEN, Stacy is a recognized leader in malnutrition advocacy and healthcare innovation. Her research focuses on malnutrition assessment and precision nutrition for trauma and ECMO patients, including the advancement of indirect calorimetry and imaging technology. Stacy is currently completing her Doctor of Clinical Nutrition, where her workl work centers on interprofessional care models and the clinical outcome effects of technology-guided nutrition support. She is a frequent speaker at national and international conferences, and serves as an Associate Editor for Nutrition in Clinical Practice.

    Marianne Aloupis, MS, RDN, LDN Marianne Aloupis is the Director of Clinical Nutrition Support Services at the Hospital of the University of Pennsylvania, where she leads a team dedicated to advancing evidence-based nutrition care. A registered dietitian with more than 20 years of specialized experience in nutrition support, Marianne is passionate about elevating the role of the registered dietitian in clinical practice and interdisciplinary care. She has spearheaded multiple initiatives to optimize malnutrition diagnosis and documentation practices across her health system, as well as collaborative projects to standardize clinical nutrition interventions that improve patient outcomes. Marianne has served on multiple committees within the Academy of Nutrition and Dietetics (AND) and the American Society for Parenteral and Enteral Nutrition (ASPEN). Most recently, she has participated in the AND Workforce Capacity and Demand Task Force and the ASPEN Malnutrition Committee.

    Terese is a registered dietitian nutritionist with 50 years of experience as a dietitian in management and clinical practice in hospitals, clinics, and private practice. Her B.S. is from Eastern Washington University, and dietetic internship at the Mayo Clinic and St. Mary's Hospital in Rochester, MN, with an MBA from the City University of Seattle. She is a Fellow of both the Academy of Nutrition and Dietetics and the American Society of Parenteral and Enteral Nutrition. Terese was a member of the workgroup that created the Academy of Nutrition and Dietetics/American Society for Parenteral and Enteral Nutrition Indicators (AAIM) to Diagnose Adult Malnutrition. She continues to serve on professional committees and has contributed to textbooks related to adult malnutrition, and functional nutrition status. She owns MySurgeryPlate LLC, to audit, educate and consult on effective and compliant malnutrition documentation, malnutrition informatics, teach handgrip strength examination, documentation for malnutrition and sarcopenia, and promote program development for ambulatory and acute care associated adult malnutrition.
