Hemisfair C1

CPE: 1.5

Proficiency: Intermediate knowledge/experience

Tracks: Technology & Innovation, Education, Preceptorship & Workforce Development

Theme: Future of Practice & Innovation

Description

Generative artificial intelligence (AI) is rapidly transforming how we teach, learn, and practice in health professions education. While simulation-based learning is foundational in training dietitians and other health professionals, creating realistic scenarios can be time- and resource-intensive. This interactive session will highlight innovative ways generative AI can be used to create dynamic simulations that enhance experiential learning and skill development. Presenters will showcase examples of AI-powered simulations used in dietetics education and interprofessional training, including the Motivational Interviewing Counseling Buddy, the Leadership Lab, and an interprofessional healthcare system featuring AI-generated patients, clinicians, and leaders. These tools create immersive environments for practicing counseling, communication, and decision-making.

Learning Objectives

  • Describe how generative AI can be used to design and facilitate realistic simulations that enhance experiential learning in dietetics and interprofessional education.
  • Demonstrate how good prompt design influences the outputs of AI-generated simulations to create accurate and engaging educational content.
  • Evaluate approaches for integrating AI simulations ethically and effectively into health professions education to support communication, leadership, and critical thinking skill development.

Performance Indicators

  • 6.1.2 Applies understanding of informatics terminology and input and output devices (e.g., food and nutrition management systems, electronic health record (EHR), relational databases, wearables, cloud platforms, AI-driven tools).
  • 10.4.7 Demonstrates competent use of technology to enhance learning experiences and the delivery of information.
  • 6.3.5 Understands emerging technologies (e.g., AI, machine learning) and associated ethical considerations, including bias, data ownership, transparency, and the responsible use of data by healthcare professionals or clients.

    Rebecca Brody

    Professor, Rutgers University

Dr. Rebecca Brody is a Professor in the Department of Clinical and Preventive Nutrition Sciences at Rutgers School of Health Professions. She received her PhD in Health Sciences from Rutgers University. Her research agenda explores training and education for dietitians, health professionals, and students in clinical nutrition and advanced practice. Most recently, she has investigated the interrelationships between diet and mental health disorders, as well as the use of AI in teaching and clinical simulation. Recent projects include building a virtual hospital simulation to engage students in leadership and change management and developing chatbots to role-play complex ethics scenarios. She is the current chair of the Academy of Nutrition and Dietetics’ Ethics Committee and serves on CDR’s Workforce Capacity and Demand Taskforce. She has also held numerous other professional volunteer roles, including serving as a CDR Commissioner, a member of CDR’s Appeals Panel, and ACEND’s Advanced Practice Doctorate Expanded Standards Committee. She combines her clinical, management, and leadership experience with innovative educational strategies to teach entry-level and doctoral graduate nutrition students.

    Jason Stevens

Professor of Nutrition, Austin Community College and Rutgers University

Dr. Jason Stevens is a clinical dietitian, college educator, and speaker whose work spans cancer care, pelvic health, and the role of AI as a creative partner in higher education. Dr. Stevens has developed numerous custom GPTs to harness generative AI to create and enhance simulations used by educators, students, and clinicians. With over sixteen years of practice as a Registered Dietitian Nutritionist, Dr. Stevens blends his expertise in nutrition with a passion for innovation. He earned his Master of Science in Dietetics from the University of Oklahoma and, in 2021, completed a Doctor of Clinical Nutrition at Rutgers University, including an advanced-practice residency focused on men’s chronic pelvic pain under Dr. Susie Gronski—an effort for which he was awarded for outstanding clinical performance. He is currently a full-time faculty member at Austin Community College and an adjunct assistant professor at Rutgers University. He also maintains an active clinical practice in nutrition for men’s pelvic health, and is recognized as the only Registered Dietitian Nutritionist currently specializing in this area. Outside the classroom, he is a coffee aficionado and gaming enthusiast.
