CPE: 1.5

Proficiency: Basic knowledge/experience

Track: Public Health, Health Equity & Community Nutrition

Theme: Food, Culture & Connection

Description

Many Food-as-Medicine programs assume that delivering medically tailored meals (MTMs) guarantees clinical impact. Yet real-world utilization data show a stubborn truth: a large share of prescribed meals are not eaten consistently enough to change outcomes. This advanced, evidence-based session reframes the problem from access to adherence. A multidisciplinary panel—behavioral medicine, clinical nutrition, and culinary science—will unpack why patients don’t consume MTMs (competing priorities, palatability, cultural fit, habits, care-team workflows) and what actually improves consumption. We will examine adherence drivers (sensory appeal, personalization, coaching, feedback loops), review emerging outcomes evidence and policy context, and translate findings into practical frameworks RDNs can apply across care settings. Attendees will leave able to identify barriers, select evidence-based adherence strategies, and integrate them into MTM design, counseling, and care coordination—so Food-as-Medicine delivers on its clinical and economic promise.
