Roofe is a professor and chair of the department of nutrition and family services in the College of Health and Behavioral Sciences at the University of Central Arkansas, where she has worked since 2002. She is a past chair of the university’s dietetic internship and didactic program in dietetics. Previously, Roofe was a clinical, outpatient and consultant dietitian in Arkansas and Oklahoma. Within the Academy, Roofe has served on the Ethics Committee; the Commission on Dietetic Registration’s Advanced Practice Residency Award Review Committee; and in the House of Delegates representing Arkansas. She is a member of the Nutrition and Dietetics Educators and Preceptors and the Accreditation Council for Education in Nutrition and Dietetics. She chaired ACEND’s Program Accreditation and Policy and Procedure committees and has served as a site reviewer for ACEND since 2014. She was president of the Arkansas Academy of Nutrition and Dietetics in 2013-2014 and is the affiliate’s strategic planning coordinator. Roofe is also active in the Council of Administrators in Family and Consumer Sciences, serving as the organization’s president in 2022-2023. Among her numerous honors and awards, Roofe received the University of Central Arkansas’ Excellence in Online Teaching Award in 2017. Roofe is a graduate of the University of Central Arkansas and earned a master’s degree in corporate health promotion from the University of Arkansas. She earned a doctorate in family and consumer sciences education from Iowa State University.
