Description
Artificial intelligence is increasingly present in nutrition and dietetics practice, from documentation and decision support to global food monitoring and consumer applications. Yet the most consequential shift may not be technological, but relational. As AI becomes embedded in professional and personal systems, it is reshaping how people relate to food, data, authority, and decision-making. This session explores the evolving human-AI relationship through complementary lenses of behavior, ethics, and applied critical thinking. Dr. Hogg will examine emerging ethical and privacy challenges, highlighting where risk, responsibility, transparency, and trust intersect. Dr. El-Kour will explore how AI influences attention, habits, perceptions of authority, and decision-making, and how critical thinking must evolve at the intersection of human behavior, technology, and context. Designed as an interactive Human–AI Decision Lab, attendees will work through evolving nutrition scenarios, making initial judgments and reconsidering them as AI-generated recommendations and new behavioral, ethical, privacy, or contextual information emerge. Participants will examine what influences their decisions, what they trust, what may be missing, and where responsibility rests. Attendees will leave with a practical framework for engaging with AI while strengthening human judgment, ethical responsibility, critical thinking, and intentionality in practice.
