Cox is the owner and cofounder of Cox Duncan Network, a foodservice consulting firm specializing in food safety, food management, health and nutrition. In her career in clinical nutrition, Cox has worked as assistant vice president at Carolinas Healthcare; administrative director for food and nutrition at Memorial Hermann Texas Medical Center; and director of food and nutrition services at Memorial Sloan Kettering Cancer Center in New York City.
Cox is a past president and board member of the National Society of Healthcare Foodservice Management. She received the 2007 North American Association of Food Equipment Manufacturers' honorary doctorate of foodservice. Within the Academy, Cox has served in the House of Delegates as a professional issues delegate. She was a member of the Quality Committee and Honors Committee, and was a member and chair of the Nominating Committee. Cox is active in the Academy's Dietitians in Business and Communications; Management in Food and Nutrition Systems; and Food and Culinary Professionals dietetic practice groups.
Cox is a graduate of City University of New York – Herbert H. Lehman College and received a master’s degree from New York University.
