Randall is an instructor and director of the master of science in public health nutrition dietetic internship in the department of nutrition at Case Western Reserve University. Previously, she was an inpatient diabetes educator at the Cleveland Clinic and director of education at Diabetes Partnership of Cleveland. She has also taught at Ursuline College and was an extension educator at Ohio State University Extension.

She received the President's Award and the Recognized Young Dietitian of the Year Award from the Ohio Academy of Nutrition and Dietetics. Randall is a past president of the Ohio and the Greater Cleveland district affiliates and represented Ohio in the House of Delegates. She was a member and chair of the Academy's Member Value Committee and a member of the Academy Positions Committee, Council on Future Practice and Committee for Public Health and Community Nutrition.

She is a certified diabetes educator and earned specialty certificates in adult weight management, child weight management and leadership. Randall is a graduate of Case Western Reserve, where she also earned a master's degree.
